Acclimation for seahorse?

What are these things and how do I shut them off. For my quarantine tank, can I use another display saltwater aquarium for it (same water temperature). If I do use that as my quarantine tank then do I really have to let them go into it. The quarantine tank doesn't make sense, because the salinity will most likely have changed. And what does the nitrifying bacteria do? Also, they really don't say what food they feed their seahorses. They say like bloodworms, but they don't say what kind and the food on the website has all sorts of different brands.
